Githeri is my favourite dish especially when made with raw corn. My mom used to make it for us and we would enjoy taking it mostly 3 times in a week. This is also because she was a farmer for corn and this beans and other legumes.
Ingredients
- Raw corn seeds or matured corn seeds
- Wairimu bean
- Optional: different kinds of vegetables that are available
quantities dependant on family size
Instructions
- Corn and bean is mixed in a ratio of 1:1. The mixture is then boiled over fire.
- When ready, it is mixed with salt to taste and consumed
- The mixture is fried using onions, potatoes, cabbages and tomatoes to add taste for household that the rest of ingredients are available.
For the poor communities the ready boiled mixture of corn and beans is added salt to taste and consumed directly.
